This lovely roast chicken traybake is so generous that you’d be hard-pressed to notice it’s low-cal. The chorizo flavours the dish beautifully – a properly filling week-night dinner.

Each serving provides 505 kcal, 47g protein, 27g carbohydrates (of which 15g sugars), 21g fat (of which 5.5g saturates), 11g fibre and 1g salt.

Ingredients

  • 2 onions, quartered
  • 2 red peppers, seeds removed, quartered
  • 1 yellow pepper, seeds removed, quartered
  • 8 large tomatoes, preferably on the vine
  • 80g/3oz chorizo, sliced
  • 400g tin cannellini beans, drained and rinsed
  • 4 garlic cloves, bashed
  • 2 sprigs fresh rosemary
  • 8 chicken thighs, skin-on, bone-in
  • 2 tbsp olive oil
  • 1 tsp sea salt flakes
  • freshly ground black pepper

Method

  1. Preheat the oven to 200C/180C Fan/Gas 6.
  2. Put the onions, peppers, tomatoes, chorizo, beans, garlic and rosemary in a very large roasting tin (you may choose to use two tins). Top with the chicken, then drizzle with the oil.
  3. Scatter with the salt and a big pinch of pepper. Roast for 1 hour, or until the chicken is cooked through and the skin is golden brown. To check if the chicken is cooked, pierce the thickest part with a skewer; the juices should run clear. If there is any sign of pink, return the bake to the oven until the chicken is cooked.
  4. Leave the chicken to rest for 10 minutes, then serve with the vegetables.

Don't do only cardio

While cardio should be a part of your program, it should not be the ONLY thing in your program. Yes, cardio is great for burning calories and obviously needed for good heart health but when it comes to weight loss, cardio is only a small piece of the puzzle. Now I'm not saying to skip cardio because, it does need to be done, but it is not the biggest point of emphasis in a good weight loss program. You will still want to work up to about 5 days of cardiovascular activity per week for best results.

Do lift weights at least 3 times per week

Lifting weights and strength training is an absolute necessity when it comes to weight loss as it facilitates building muscle. Why is that important? When you build muscle, your metabolism increases and allows you to burn more calories. Building muscle is also great for bone health as your bones become stronger as your musculature increases. For beginners, 2-3 days of weight lifting per week is sufficient but eventually you will want to get to 3-5 days/week depending on your program.

Don't go too fast

Trying to do too much too fast is just as detrimental to your adherence to a fitness program as not doing enough. Too often, people try to do too much starting off end up burning out after 2-3 weeks and reverting back to old habits. Meal prepping takes less time than you think and will make your entire week much easier. Ingredients

 2 3/4 cup water

 5 teaspoons or two packs of active dry yeast

 7 cups (2 lbs, 2 1/2 oz) of bread flour (you can replace each delicate purpose; reduce the water to 2   1/2 cups)

 1 tablespoon salt

 One quarter cup olive oil, preferably a virgin

 instructions

 Sprinkle yeast on slightly warm water (95 °) in a small bowl or measuring cup. Move it briefly   followed by allowing the mixture to sit for about 10 minutes.

 Measure the flour and place it in a bowl in the kitchen mixer with the dough tie. If made by hand,   place the flour in a large mixing bowl.

 Turn on the blender, add the salt to the flour, and allow the dough to mix well. Slowly dampen the   olive oil in flour while running the blender. If bread is made by hand, use whisk.

 Slowly moisten the yeast and water mixture, allowing the dough to be kneaded by the machine for   four minutes.

 If the dough is done by hand, mix the flour with the yeast and mix the water with a wooden spoon,   then turn the dough over a crushed surface and knead for five minutes.

 After kneading, you should have a soft paste such as a paste that is slightly reflected when pressed   with your finger.

 Cover the dough while in the container with a piece of tarpaulin sprayed with cooking spray using a   kitchen towel. Leave it for an hour or even double.

 Knead the hand-risen dough on a thin surface for about a minute to remove the air. The dough is   made in two equal sized balls and placed on a 15-inch baking sheet.

 Cover the loaves again with tarpaulin and a kitchen towel, and let it rise again for 20-25 minutes or   even double. Meanwhile, preheat the oven to 425 degrees.

Beef with tarragon sauce

Beef traditionally has spread over the top of the fillet, which makes it very rich. This recipe is lighter, but with a lovely taste from the tarragon.



Ingredients

  • 1.3kg/2lb 14oz middle-cut fillet of beef
  • 1 tbsp oil
  • 1½ x 375g packets all-butter puff pastry
  • plain flour, for dusting
  • 1 egg, beaten with a dash of milk
  • salt and freshly ground black pepper

For the topping

  • large knob of butter
  • 350g/12oz mixed mushrooms (such as button, chestnut, wild), thinly sliced
  • 50g/1¾oz Parmesan, finely grated
  • 1 tbsp finely chopped tarragon
  • 2 tsp Dijon mustard
  • 1 egg yolk

For the tarragon sauce

  • small knob of butter
  • 100g/3½oz button mushrooms, finely sliced
  • 1 tbsp plain flour
  • 400 ml / 14 fl oz full-fat crème fraiche
  • 1 tbsp Dijon mustard
  • 1 tbsp freshly chopped tarragon
  • a pinch sugar

Method

  1. Preheat the oven to 220C/200C Fan/Gas 7.

  2. Season the beef with salt and pepper. Place a large frying pan over a high heat, add the oil and fry the beef on all sides until browned. Transfer to a baking tray and roast in the oven for 15–18 minutes. Turn the oven off and remove the beef. Leave to cool, reserving any cooking juices, and then chill in the fridge for at least 1 hour (see tip).

  3. Next make the topping. Melt the butter in the same pan and fry the mushrooms over a high heat for 5–10 minutes – you may need to do this in batches. Tip the mushrooms into a sieve set over a bowl to collect the juices and reserve these for the sauce. 

    Transfer the mushrooms to another bowl and allow to cool before mixing with the Parmesan, tarragon, mustard and egg yolk. Season with salt and pepper and chill in the fridge for 30 minutes.

  4. Line a baking sheet with baking paper. Sit the single 375g packet of pastry on a floured work surface and roll out to a square about 40cm/16in in size, then transfer it to the baking sheet. Place the cooked beef to one side of the pastry and spoon the mushroom mixture on top. Fold over the ends of the pastry and then fold the longest edge over the beef, sealing along the side with a little of the egg wash. Chill in the fridge for 30 minutes. While it is chilling, preheat the oven again to 220C/200C Fan/Gas 7.

  5. Brush the top of the chilled beef Wellington with egg wash. Roll out the remaining half block of pastry and cut into 8 thin strips: lay 4 strips diagonally, and evenly spaced, across the top of the beef Wellington, and 4 strips across these to create a lattice pattern. Brush the lattice with egg wash and then roast in the oven for 30–35 minutes or until the pastry is golden-brown and crisp.

  6. Meanwhile, make the tarragon sauce. Melt the butter in the same frying pan and fry the mushrooms over a high heat for 5–10 minutes or until the juices evaporate. Sprinkle in the flour and add the crème fraîche with the reserved mushroom juices (from the topping), the mustard and tarragon. Season with salt, pepper and sugar and bring to the boil, stirring. Simmer for 3 minutes until reduced slightly and add any beef juices from the original baking tray. Keep hot.

  7. Allow the beef Wellington to rest, covered with foil, for 15 minutes before carving. Slice into thick slices and serve with the hot tarragon sauce.
