Three Quick and Easy Fish and Seafood Recipes


Cooking fish and seafood is quick and easy - once you\'ve got a couple of good recipes to fall back on! Here are three of our favourite fish and seafood recipes that are quick and easy to cook and taste absolutely delicious.

Prawn and Courgette Linguine (serves two large portions)


Ingredients

3 medium courgettes, halved lengthways and sliced
olive oil
pinch dried chilli flakes
1 garlic clove, finely chopped
400g cooked peeled prawns
200g tin chopped tomatoes, drain the juice
400g linguine, cooked
fine chopped basil leaves

How to prepare

Heat 2 tbsp of the olive oil, add the courgettes into the pan and fry on a low heat until they start to brown. Season, add a small amount of water and cook while stirring hard to break the courgette down into smaller pieces (for around 10 minutes).

Add the garlic, chilli and the basil leaves and cook for a further 2 minutes to enhance the flavours.

Throw in the prawns, 3 tbsp chopped tomatoes and the basil, cook for a further 5 minutes then add another 1-2 tbsp olive oil. Stir the sauce through the linguine and serve in large open bowls to finish.

Basque-style Salmon Stew


Ingredients

1 large onion, thinly sliced
1 tbsp olive oil
400g small potatoes, unpeeled and halved
2 tsp smoked paprika
3 mixed peppers, deseeded and sliced
2 tsp dried thyme
2 garlic cloves, sliced
4 salmon fillets
400g can chopped tomatoes

How to prepare

Heat up the olive oil in a large pan and then add the onions and mixed peppers when the pan is nice and hot, along with the potatoes and garlic.

Cook, stirring regularly for 5-8 minutes, until the ingredients begin to brown. Now, you can add the paprika, tomatoes, garlic and thyme. Bring it to the boil, stir a few times and then cover the pan with the heat turned low and simmer for 10-12 minutes. Add a tiny bit of water if the sauce gets too thick.

Season the stew and lay the salmon on top, skin side facing down. Put the lid back on and simmer gently again for 7-8 minutes, until the salmon is cooked through and pink.

Smoked Haddock Chowder


Ingredients

900g potatoes, peeled and diced
450g smoked cod or smoked haddock
1 bay leaf
50g butter
Chopped fresh parsley, for sprinkling
2 onions, finely chopped
2 tbsp light olive oil
140g/5oz frozen sweetcorn
3 celery sticks, thinly sliced
3 garlic cloves, crushed with 1 tsp sea salt
2 tsp chopped fresh thyme or ½ tsp dried thyme
2 leeks, halved lengthways and thinly sliced
600mlmilk

How to prepare

Place the fish in a deep frying pan along with a bay leaf and a pint of boiling water. Cover the pan and simmer for 2-3 minutes. Turn off the heat and leave to stand, with the lid still on for 5 minutes.

Drain, but keep the boiled water to one side, before flaking the fish with a fork.

Now you can heat the oil and the butter in a deep saucepan. Add the vegetables and garlic and fry over a high heat until they start to soften. Stir in the thyme and the boiling water you kept aside and bring it to the boil.

Lower the heat and simmer for 9-11 minutes until the vegetables soften further. This will be helpful for your next step.

Pour half the soup into a bowl and mash with either a fork or a potato masher. Place back into the pan with the milk and fish. Simmer for 3-4 minutes, season if needed and top with the chopped parsley to serve.

Jollof rice with fried plantains

Ingredients

For the rice
  • 1 tbsp olive or vegetable oil
  • 2 large onions, sliced
  • 2 x 400g/14oz cans plum tomatoes
  • 1 red pepper, diced
  • 4 tbsp tomato purée
  • ¼ tsp cayenne pepper or chilli powder
  • 1 tsp curry powder
  • 1 bay leaf
  • sprig fresh thyme
  • 1 stock cube
  • 225g/8oz long-grain or basmati rice
  • salt and freshly ground black pepper
To serve
  • 2 plantains, cut into slices and deep fried
  • green leaf salad

    Preparation method

    1. For the rice, heat the oil in a large pan and cook the onions over a gentle heat until translucent.
    2. Stir in the canned tomatoes, red pepper and tomato purée, then season with salt, freshly ground black pepper and the cayenne or chilli. Add the curry powder, bay leaf and thyme, then pour in 550ml/19fl oz of water and crumble in the stock cube.
    3. Cover and bring to the boil, then reduce the heat and simmer for 20–30 minutes.
    4. Rinse the rice well to remove excess starch, then add it to the tomato mixture.
    5. Bring to the boil, then reduce the heat to low. Cover and simmer for 25–30 minutes, or until the rice is cooked.
    6. Season to taste with salt and freshly ground black pepper and serve the joffol with fried plantains and a crisp green salad.

• 1/2 mango drizzled with 1 tsp. freshly squeezed lime juice

Dinner

• Crispy Chicken: 4 ounces baked chicken breast (Skinless chicken breast dipped in egg white and coated with 3 tbs bread crumbs. Bake at 350F for 20 minutes or until cooked through.)
• 1 cup steamed broccoli
• 4-ounce baked potato topped with 1 tsp butter, 2 tbs fat-free sour cream and chopped chives
• 1 baked apple (Core and fill with 2 tsps brown sugar, 1 tsp chopped walnuts and 1 tbs raisins. Place in pan and cover with 2 tbs apple juice. Bake at 350F for 45 minutes or until tender.)

Piri-piri chicken

Ingredients


  • 1 whole chicken (about 1kg/2lb 3oz), spatchcocked
  • salt and freshly ground black pepper
For the piri-piri sauce
  • 6-12 fresh red chillies, depending on how hot you want it
  • 1 tbsp garlic, blanched and chopped
  • 1 tsp salt flakes
  • ½ tsp oregano
  • ½ tbsp paprika
  • 100ml/3½fl oz olive oil
  • 50ml/1¾fl oz red wine vinegar
To serve
  • chips
  • salad

    Preparation method

    1. To make the piri-piri sauce, preheat the oven to 180C/350F/Gas 4. Place the chillies on a roasting tray and roast them for 10 minutes.
    2. Cool and roughly chop the chillies. Place the chillies, garlic, salt, oregano, paprika, olive oil and vinegar in a saucepan, and simmer for 2-3 minutes.
    3. Allow the mixture to cool, then blend it to a purée in a jug blender or food processor. Store in a lidded container at room temperature; it will keep for about a month. Shake before using.
    4. Place the spatchcocked chicken in a sealable plastic bag. Add half the piri-piri sauce, spreading it evenly over the chicken. Seal and marinate in the refrigerator for at least one hour.
    5. Preheat the oven to 200C/390F/Gas 6, and preheat a large griddle pan on the hob. Alternatively, light your barbecue.
    6. Season the marinated chicken, and cook it on the griddle pan for 2-3 minutes on each side, until golden brown.
    7. Transfer the griddled chicken to a roasting tray and roast in the oven for 30 minutes, until cooked through. Alternatively, place the chicken on a medium heat barbecue, covered, for 10-15 minutes on both sides or until cooked through, basting regularly with the remaining piri-piri sauce.
    8. Serve with chips and salad.

Chicken salad with couscous and oranges

Ingredients

  • 2 large handfuls couscous
  • 1 lemon, juice only
  • 3 oranges, 2 juice only, 1 left whole
  • couple glugs fruity olive oil
  • salt and freshly ground black pepper
  • handful chicken meat from a leftover organic roast chicken
  • handful chopped fresh chives
  • handful fresh basil leaves, more if you fancy
  • handful pea shoots


    Preparation method

    Put the couscous in a bowl and pour over some boiling water (it should cover the grains by a couple of centimetres or so). Leave for about 15 minutes, until the couscous has absorbed the liquid.

    How to make couscous

    1. In a separate mixing bowl, whisk together the lemon juice and the orange juice with the olive oil and season well with salt and freshly ground black pepper, adding more olive oil if desired. Pour the dressing over the cooked couscous and let it soak the dressing up for about 10 minutes.
    2. Meanwhile, peel the remaining orange by cutting the ends off, placing it on a chopping board and cutting down the sides with a sharp knife to remove the skin and pith. Cut the orange into good-sized chunks. Add the orange chunks, chicken and herbs to the couscous and mix gently. Don't over-mix; it's about a lightness of touch.
    3. Divide the pea shoots between two plates or shallow dishes and then gently top each with the chicken couscous salad.
